Peeps French 75
- 1/2oz Peeps simple syrup
- 1oz gin
- 1/2oz lemon juice
- Prosecco
Garnish: a Peeps Bunny!
In a cocktail shaker, combine Peeps simple syrup, gin and freshly squeezed lemon juice. Add ice and shake well. Strain into a champagne flute and top with Prosecco.
Peeps Simple Syrup
- 8 Peeps
- 1/2 cup sugar
- 1/2 cup water
Add Peeps, sugar and water to a frying pan or sauce pan on low heat. Heat slowly until all of the ingredients melt together to form a syrup, stirring occasionally. Once the syrup is formed, strain into a glass jar with a fine mesh sieve. Store in the fridge for up to 2 weeks.
